The company built a federally inspected clean room, cooler and equipment wash down area. Pasta and packaging equipment set up and shakedown was completed by the end of June 2006. The company has two production lines. The first line consists of an extruder pasta machine that is capable of producing 50 ? 80 kg/hr. of short line product. The second line consists of a mixer (20 kg/6 min), a sheeter machine that can produce 300 kg/hr it feeds the cutter/nesting machine that is capable of producing 300 kg/hr of long line pasta products in a straight form or in nests. Both lines can produce pasta sheets for lasagna. The product is packed in gas impermeable plastic bags using a vacuum machine that evacuates the ambient air and replaces it with nitrogen/carbon mixture that gives the pasta a 28 day shelf life. The company is producing these categories of organic and conventional pastas. 1. Tagliatelle ? typical long line flat pasta, linguini, spaghetti, fettuccine etc. 2. Trafilata ? short pasta, shells and whatchamacallets 3. Oriental Noodles ? round long line, different thicknesses, Udon, Ramen, Soba 4. Oven Ready Pasta Sheet for lasagna, ravioli, desserts Over thirteen different shapes or dimensions can be manufactured. The company is also manufacturing pasta using other ingredients that are customized to meet customer?s requests. Other ingredients that can be and are utilized: ?
